Pulled Chicken Recipe (Crockpot Dish)

Makes 6 servings


• 2 sliced onions
• 1 jar roasted red peppers
• 1 can hot rotel (diced tomatoes with habaneros)
• 1.25 pounds organic chicken breast (trim the fat)
• 1 packet low sodium taco seasoning (or home-made taco seasoning if you make it yourself)
• ½ jar fresh salsa


1. Place ingredients into crockpot, in the order of the list
2. Cook on high for 6-8 hours
3. Shred chicken with a fork
4. Optional: add ½ can black beans, top with avocado (not included in nutrition facts)
